Planted in 1979, these old vines sit among the Granite hillsides of the Bunyip state park, an area of ancient inactive volcanoes. Planted with Pinot Gris, Pinot Grigio (Italian Clone), Sauvignon Blanc, Chardonnay. The site stands alone amongst thousands of acres of native forest, as there are no other vineyards or farming nearby. Because of the remoteness, competition with the wildlife plays a significant role as Kangaroos, Wallabies, Wombats and Deer commonly have their fill. As such. about one third of the vineyard, As total production is left at harvest time. Skin fermented for 48 hours, with 14 months undisturbed aging in ceramic egg. A blast of expression and texture with sublime aromatics. Herbs and flowers with deep tropical and citrus qualities.
