Hatch 2020

Fruit gleaned from an old private orchard in Sebastopol, CA. A blend of Jonathans, Russets, Pippins, and several other mid-season fall apples. All from old and unkempt trees nearing 100 years of age. 6 weeks in stainless after fermentation, and then dosaged with fresh juice before bottling. A perplexing and unique expression, with savory and medicinal notes. Giving the false impression of sweetness, the cider is very dry with dusty tannins that stick to the palate.
