Patrick Desplats is a pioneering figure in the world of natural wine, known for his radical approach to winemaking and deep connection to nature. After co-founding Domaine des Griottes and producing influential zero-zero wines in the late 1990s and early 2000s, he shifted to using qvevri, inspired by Georgian winemaking traditions. In 2020, he saw his vision come to full fruition with a highly successful vintage, marking a new peak in his 20-year career. Despite many challenges from frost and climate change along his decades-long journey, Patrick continues to embrace nature’s unpredictability, focusing on energy and polyculture, creating wines that reflect his deep and profound philosophy of harmony with the earth.
